Gazpacho is traditionally a tomato-based cold summer soup which surprisingly did not originate in Italy like I always thought but in Andalucia. There is a possibility that it was brought by the Moors which means its actually closer to my people than I imagined. Nice. This recipe is my attempt to recreate the gazpacho currently served at Four cafe in Eagle Rock. The ultimate summer meal. Enjoy!
